Ayurvedic Sweet Potato Pesto Pizza

Just because you’re plant-based Ayurvedic, doesn’t mean the pizza party has to stop! In fact, it just got upgraded with a root veggie crust, plant-based pesto, almond feta, roasted chickpeas, and assorted veggies.This easy-to-make pizza will leave you satiated and craving free. And best of all, it’s tomato free so you can share it with all the Pittas in your life (and we all have at least one)!

PLANT-BASED PESTO INGREDIENTS

2 cups Fresh Basil Leaves, tightly packed ½ cup Walnuts or Pine Nuts1 Garlic Clove, choppedSea Salt and Black Pepper, freshly ground, to taste1 tablespoon Lemon Juice3 tablespoons Nutritional Yeast½ cup Extra Virgin Olive Oil*Makes 1¼ cup.

PLANT-BASED PESTO ASSEMBLY

1 | To make the pesto, combine all the ingredients except the olive oil in a food processor. 2 | Pulse until mixture is coarsely ground, streaming in olive oil while blending. 3 | Transfer to an airtight container and refrigerate until ready to use.

SWEET POTATO PESTO PIZZA INGREDIENTS

1 cup Sweet Potato, baked and mashed 1 cup Oat Flour (or Almond Flour for Paleo)1 teaspoon Baking Soda½ teaspoon Oregano, dried½ teaspoon Basil, dried¼ teaspoon Curry Powder (optional)½ teaspoon Sea Salt⅛ teaspoon Black Pepper, freshly ground

For the Toppings:

Almond FetaChickpeas, roastedMushrooms, Kale, or Artichoke coated in Olive Oil1 handful of Arugula tossed in Olive Oil and Lemon (optional)

SWEET POTATO PESTO PIZZA ASSEMBLY

4 | Preheat oven to 400 degrees and line a baking sheet with parchment paper.5 | In a large bowl, combine the sweet potato, flour, baking soda, oregano, basil, curry powder, salt, and pepper. Knead well until the mixture resembles pizza dough.6 | Coat a wood board and rolling pin with flour and roll the dough into a large circle (about ½-inch thick.)7 | Bake for 15-20 minutes, or until the crust edges are slightly browned.8 | Remove the crust from the oven.
