Barberry Beauty Jam
I have a huge love affair with barberries and am so happy to bring the benefits of this amazing berry to the wellness community. As a child, I thoroughly enjoyed eating them weekly as part of my mother’s Persian cooking.
Barberries include high levels of berberine. Not only are they known to help manage blood sugar levels, fight infections, and support healthy cholesterol levels, they are also wonderful for the skin — and are a true beauty food.
I was inspired to make this recipe after having leftovers from a combination of similarly prepared barberries with saffron rice. I randomly decided to put the leftover barberries on a piece of toast and had an aha moment of how I can make the recipe more accessible and user friendly for my friends. If you are a fan of a sweet but sour flavor, this will be your new jam!
Ingredients:
- 1 cup barberries, soaked overnight
- 1/4 cup organic lemon juice
- 1 teaspoon of salt
- 1/2 cup organic maple syrup
- 1/2 teaspoon ground saffron (in a spice grinder, grind about 50 saffron threads or 4 pinches from our Strands of Sunshine™ jar)
Instructions:
- Place all the ingredients in a stainless steel saucepan and bring to a boil.
- Reduce heat and let simmer for 30 minutes until jam-like consistency.
