Sweet Laurel’s Cacao Pots de Crème is Tres Healthy
One of my favorite things about cacao (other than it being absolutely delicious) is it contains a high level of theobromine, an excellent source of energy. Theobromine literally means ‘food of the gods’ and has been used for thousands of years as a mood booster.This Cacao Pots de Crème recipe is thick and decadent and promises to satisfy even the most intense of chocolate cravings. It’s a super simple recipe that still contains a gourmet feel (not to mention it sounds just about as gourmet as it gets).Keep this in the fridge for a midday snack/boost, because there’s nothing better to get you through that 3pm hump than theobromine… we mean… chocolate.
CACAO POTS DE CREME INGREDIENTS
4 cups coconut cream or full fat coconut milk 1 cup cacao powder¾ cup maple syrup (or 4-5 drops monk fruit or stevia drops, to taste)2 tablespoons vanilla extract¼ teaspoon himalayan pink saltCoconut Whipped Cream:1 can coconut cream or milk (refrigerated overnight)1 tablespoon maple syrup
CACAO POTS DE CREME ASSEMBLY
1 | In a saucepan, mix the coconut milk or cream, maple syrup, and cacao. Whisk constantly, until mixture is about to simmer.2 | Remove from heat and add vanilla and salt. 3 | Pour into serving cups and allow to sit in the fridge overnight (or at least 12 hours).4 | Serve with a tiny dollop of coconut whipped cream (recipe below).Coconut Whipped Cream:1 | Remove the lid of the coconut cream or milk and scoop out the fat from the top of the can. 2 | Gently fold in the maple syrup and stir until cream is whipped.3 | Place atop your Cacao Pots de Crème, and enjoy!*Yields 6 servings.Laurel Gallucci is the baking master and co-founder of Sweet Laurel Bakery, LA’s grain-free, dairy-free, and refined sugar-free bakery.
