Homemade Coconut Donuts

We all have those times when we just need a donut… no matter what. So before you break down and head to your corner bakery for a sure-to-be sugar crash, try this grain-free, refined sugar-free, and dairy-free coconut delight you can make (much more healthily) in the comfort of your own home.

BAKED DOUGHNUTS INGREDIENTS

3 cups Blanched Almond or Hazelnut Flour½ cup Coconut Yogurt½ teaspoon Baking Soda¼ teaspoon Himalayan Pink Salt⅓ cup Maple Syrup1 teaspoon Vanilla Extract¼ cup Coconut Oil, melted2 teaspoons Apple Cider Vinegar4 Eggs, at room temperature, whites and yolks separated

Coconut Butter Icing: 

¼ cup Coconut Butter2 teaspoons Maple Syrup or Honey½ teaspoon Lemon Juice¼ teaspoon Vanilla¼ cup Coconut Milk

BAKED DOUGHNUTS ASSEMBLY

1 | Preheat oven to 350 degrees and generously grease the donut pan with coconut oil. 2 | Combine the dry ingredients in a medium bowl, and in another medium bowl combine all the wet ingredients, except for the egg whites. Mix the wet with the dry and set aside. 3 | Beat the egg whites until firm peaks form, then gently fold egg whites into the batter. 4 | Equally distribute the batter between the donut molds, smoothing out the tops of each donut. 5 | Bake for 12-15 minutes or until lightly golden. 6 | Allow the donuts to cool, remove from pan, and chill in the fridge for 30 minutes.

Coconut Butter Icing:

1 | Mix ingredients over very low heat. 2 | Allow to cool.
