Beet Chips with Herbed Yogurt
This recipe is inspired by a revolutionary restaurant, Maine's Vinland. They are the only culinary establishment in the world that uses 100% local ingredients in every dish. I’ve had some of the best meals of my life there, and it helps to know that each bite is serving their sustainable mission. Beets have considerable health benefits including lowering blood pressure, fighting inflammation, and supporting detoxification. I know even the thought of bringing a beet into the kitchen is eyeroll worthy due to its staining pigment that makes everything look like a crime scene... but I can assure you, your kitchen will stay clean with this one. These little bites are super simple to make, and the results are beautiful. You can also garnish them with some edible flowers for an extra pop of color. For extra credit, try to source as many of these ingredients locally! | INGREDIENTS |BEET CHIPS:2 BeetsGheeSea SaltPepperHERBED YOGURT:½ cup Yogurt (Whole Milk)1 tablespoon + 1 teaspoon minced Shallot1 tablespoon minced Parsley1½ teaspoon minced Scallion⅛ teaspoon Sea SaltPinch of Pepper| ASSEMBLY |1 | Preheat the oven to 375. 2 | Lay down a large sheet of parchment paper on the counter. This is so you can handle the beets without staining your world. 3 | Peel your beets using a knife or a vegetable peeler. Slice the beets thinly on a mandoline over the parchment paper. Lay out the individual beet slices on the parchment paper. 4 | Melt about a tablespoon of ghee over the stove. When it’s melted, very lightly brush the slices of beets. It’s important not to oversaturate during this step, otherwise the chips will turn out soggy and not crunchy. 5 | Transfer the beet slices to a sheet tray, turning them ghee side down. Brush the other side very lightly with some ghee and then salt and pepper the beets to taste. 6 | Put the beets in the oven on the middle rack. Let them bake for 7 minutes. At this point, you will rotate the pan to ensure even baking. Bake for another 5-7 minutes until crisp. Let them cool on the sheet tray while you prepare the yogurt.7 | Mix the yogurt ingredients together in a bowl.8 | Right before you intend to serve, put a dollop of the herbed yogurt in the middle of each beet chip. You can garnish with microgreens and/or edible flowers. Now devour!
